【Cooking】Ginger Pork (Shogayaki) | Naoko-sensei’s Japanese Recipe No.11 |「豚の生姜焼き」なおこ先生の和食クッキング⑪【英語のレシピ】


Today we are going to introduce ginger pork (shouga-yaki:生姜焼き), a popular dish made with sweet ginger sauce. It’s not that difficult to prepare but many people seem to have a hard time making it delicious because the meat might not soak up the sauce well or the meat might become tough while simmering it . Naoko-sensei will give us a few tips on how to make a juicy, tender and flavorful ginger pork.

今回のレシピコーナーは、みんな大好き!豚の生姜焼きです。薄切りの豚ロース(thin-sliced pork loin) を使った簡単料理。でも味が染みこまない(The meat doesn’t soak up the sauce well)、肉が硬くなっちゃう(The meat becomes tough) など、美味しく作るのに苦戦してる人が多いのでは? なおこ先生のレシピでは、ちょっとした手間で悩みを解決しちゃいます。英語では、“とろみがつく”、“風味が良い”などの単語を覚えましょう。


560 g pork loin, thin sliced
1 onion, sliced
6 cm piece (2 tbsp) ginger, grated…①
3 cm piece (1 tbsp) ginger, grated…②
4 tbsp soy sauce
3 tbsp sake
4 tbsp mirin
2 tsp sugar
1 tbsp salad oil
Garlic power
Potato starch (katakuri ko:片栗粉)

***For garnish***
240 g cabbage, shreded
cucumber, sliced
tomato, cut into wedges

Add grated ginger twice. The first time is for seasoning the meat and the second time is for making the ginger pork more flavorful. 生姜は2回に分けて入れるのがコツ。1度目は肉に味を付けるため、2度目はさらに風味良く仕上げるためです。

Step.1 Make ginger sauce

  1. Combine 1 tbsp of grated ginger (①), say sauce, sake, mirin, and sugar in a small bowl. Add a pinch of garlic powder and mix.

Step.2 Saute the pork

  1. Coat the pork loin and sliced onions with potato starch. Sprinkle a small amount of ginger sauce over the meat to add the flavor of browned soy souse when sauteed.
  2. Heat 1 tbsp of salad oil over medium heat in a frying pan. Spread pork loin on the pan and saute both sides.
  3. Add sliced onions and stir-fry. Pour the ginger sauce and simmer a bit. Add 2 tbsp of grated ginger (②) and stir-fry.
  4. Serve with shred cabbages, cut tomatoes, and sliced cucumbers

Using potato starch has two benefits. You can coat the meat well with the sauce since the sauce thickens, it also prevents the meat from hardening. 片栗粉を使うとソースにとろみがつくので、肉によく味が絡みます。煮詰める必要がなくなるので、肉が硬くなりません!
