Naoko-sensei’s Japanese Recipe No.5 : Okonomiyaki /なおこ先生の和食レシピ⑤「お好み焼き」|英語でお料理

Today’s recipe is okonomiyaki, savory Japanese pancake. The popular casual dish is perfect for using up the leftovers in the fridge. You can use sliced beef or chicken in stead of pork belly. Also you can add squid, prawn or shrimps, and any vegetables you like!

今回のレシピはお好み焼きです。 なんと具にアボカドが入るのですが、それが絶妙~! 山芋がないときはジャガイモで代用できるそう。海外で作るときは、この手が使えそうですね!

Ingredient

・ 4 sliced pork belly
・ 1/4 cabbage (300 g), chopped into 1 cm square
・ 1 small avocado, diced
・ 2 eggs (100 g)
・ 200 cc okonomiyaki flour or cake flour
・ 30 cc Japanese yam or potato, grated
・ 100 cc green onion, chopped
・ 1/3 tsp bonito granules
・ Tenkasu (crunchy bits of deep fried dough)  (preferable amount)
・ shred cheese (preferable amount)
・ dried green seaweed (aonori),  Okonomi-yaki sauce, mayonnaise, bonito flakes 

Tip. 1 A Japanese measuring cup is 200 cc. But, American one is 240 cc.

Step 1. Mix ingredients. / 材料を混ぜる

1. Dissolve bonito granules into 100 cc hot water (around 40℃)

2. In a large bowl, mix okonomiyaki flour (cake flour) and Japanese yam with the bonito soup.

Tip 2. It should be as sticky as ketchup

3. Just before pan-frying okonomiyaki, add cabbages, tenkasu, shred cheese, avocados, green onions to 2. and lastly  add eggs.

Step 2.Pan-fry okonomiyaki. / お好み焼きを焼く

1. Heat oil in a frying pan. Pour or scoop the okonomiyaki dough on the pan and make a dent in the center. And pan-fry over a medium-low heat.

2. Place sliced pork belly on it, then cover and heat for a while. When the edge is brown and small bubbles are formed on the okonomiyaki, turn it over. And pan-fry the other side.

Tip 3. Don’t press with a spatula when frying the dough.

3. Dress with preferable amount of okonomiyaki sauce, mayonnaise, bonito flakes, and dried green seaweed ( in this order)
